Ingredients

  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 4 large eggs
  • 1 cup semi-sweet chocolate, melted
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 8 ounces semi-sweet chocolate, chopped

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix chocolate cookie crumbs and melted butter in a bowl.
  3. Press the mixture into the bottom of a springform pan.
  4. Beat cream cheese and sugar until smooth.
  5. Add sour cream, eggs, melted chocolate, and vanilla. Mix until combined.
  6. Pour the filling over the crust in the pan.
  7. Bake for 50-60 minutes until set.
  8. Let cool, then refrigerate for at least 4 hours.
  9. For ganache, heat heavy cream until simmering.
  10. Pour over chopped chocolate and stir until smooth.
  11. Spread ganache over chilled cheesecake.
  12. Slice and serve.
