- 1 1/2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup cherry pie filling
- 4 ounces semi-sweet chocolate, melted
Instructions
- Preheat your oven to 325°F (165°C).
- Mix chocolate cookie crumbs and melted butter in a bowl.
- Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat the cream cheese until smooth.
- Add sugar and vanilla extract, and mix until combined.
- Add eggs one at a time, mixing well after each addition.
- Stir in sour cream and melted chocolate until smooth.
- Pour the cheesecake batter over the crust.
- Drop spoonfuls of cherry pie filling on top and swirl with a knife.
- Bake for 55-60 minutes or until set.
- Let it cool, then refrigerate for at least 4 hours before serving.
Notes
- Use room temperature ingredients for better mixing.
- Try using fresh cherries for a different texture.
- Serve with whipped cream for extra richness.
