A rich chocolate swirl mousse bundt cake that combines chocolate cake with a creamy mousse filling.

- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda

- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract (for mousse)
- 1/2 cup chocolate chips (for swirl)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a bundt pan.
- In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla. Beat for 2 minutes.
- Stir in boiling water until smooth.
- Pour half of the batter into the prepared bundt pan.
- Melt chocolate chips and mix with heavy cream and powdered sugar to create the mousse.
- Pour mousse mixture over the batter in the pan.
- Top with the remaining batter.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let the cake cool for 10 minutes before inverting onto a rack.
