A flavorful coconut chicken curry with spices and creamy coconut milk.

- 1 lb chicken breast, diced
- 1 can coconut milk (400ml)
- 2 tablespoons curry powder
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon olive oil
- 1 cup chicken broth
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion, garlic, and ginger. Sauté until soft.
- Add chicken and cook until browned.
- Stir in curry powder and cook for 1 minute.
- Pour in coconut milk and chicken broth. Bring to a simmer.
- Cook for 15-20 minutes until chicken is cooked through.
- Add salt to taste.
- Garnish with fresh cilantro before serving.
Notes
- Serve with rice or naan.
- Adjust spice level by adding chili powder.
- Can add vegetables like bell peppers or spinach.
