A tropical dessert combining coconut and pineapple flavors in a creamy cheesecake.


Ingredients

  • 1 1/2 cups crushed graham crackers
  • 1/2 cup melted butter
  • 1 cup cream cheese, softened
  • 1 cup sugar
  • 1 cup sour cream
  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix crushed graham crackers and melted butter.
  3. Press the mixture into the bottom of a springform pan.
  4. In another bowl, beat cream cheese and sugar until smooth.
  5. Add sour cream, crushed pineapple, shredded coconut, eggs, and vanilla. Mix well.
  6. Pour the mixture over the crust in the pan.
  7. Bake for 45 minutes or until set.
  8. Cool the cheesecake and refrigerate for at least 4 hours before serving.

Notes

  • Use fresh pineapple for better flavor.
  • Top with whipped cream and toasted coconut for garnish.
