A tropical dessert combining coconut and pineapple flavors in a creamy cheesecake.
Ingredients

- 1 1/2 cups crushed graham crackers
- 1/2 cup melted butter
- 1 cup cream cheese, softened
- 1 cup sugar
- 1 cup sour cream
- 1 cup crushed pineapple, drained
- 1/2 cup shredded coconut
- 3 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix crushed graham crackers and melted butter.
- Press the mixture into the bottom of a springform pan.
- In another bowl, beat cream cheese and sugar until smooth.
- Add sour cream, crushed pineapple, shredded coconut, eggs, and vanilla. Mix well.
- Pour the mixture over the crust in the pan.
- Bake for 45 minutes or until set.
- Cool the cheesecake and refrigerate for at least 4 hours before serving.
Notes
- Use fresh pineapple for better flavor.
- Top with whipped cream and toasted coconut for garnish.
- Store leftovers in the refrigerator.
