- 1 pre-made pie crust
- 1 cup coconut milk
- 1/2 cup sweetened condensed milk
- 1/2 cup dark rum
- 1/4 cup shredded coconut
- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup whipped cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, combine coconut milk, sweetened condensed milk, dark rum, shredded coconut, cornstarch, and salt.
- Heat the mixture over medium heat until it thickens, stirring constantly.
- Remove from heat and stir in vanilla extract.
- Pour the filling into the pre-made pie crust.
- Bake for 25 minutes.
- Let the pie cool, then refrigerate for at least 2 hours.
- Top with whipped cream before serving.
Notes
- Use toasted coconut for added flavor.
- Adjust rum quantity to taste.
- Serve chilled for best results.
