Description
A homemade version of Popeye’s Cajun Rice, flavorful and easy to make.
Ingredients
Scale
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 tablespoon vegetable oil
- 1/2 cup diced onion
- 1/2 cup diced green bell pepper
- 1/2 cup diced celery
- 1 teaspoon minced garlic
- 1 teaspoon Cajun seasoning
- Salt to taste
- Black pepper to taste
Instructions
- Heat vegetable oil in a pot over medium heat.
- Add onion, bell pepper, and celery. Sauté until soft.
- Stir in garlic and Cajun seasoning. Cook for 1 minute.
- Add rice and stir to coat.
- Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff with a fork and serve.
Notes
- Adjust seasoning to your taste.
- Can add cooked sausage for extra flavor.
- Store leftovers in the refrigerator for up to 3 days.
