- 2 cups grilled chicken, diced
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cup corn, cooked
- 1 avocado, diced
- 1/2 cup black beans, rinsed
- 1/4 cup red onion, sliced
- 1/4 cup cilantro, chopped
- 1/2 cup ranch dressing
- 1 tablespoon lime juice
Instructions
- Grill the chicken until fully cooked.
- Let chicken cool and then dice it.
- In a large bowl, combine mixed greens, cherry tomatoes, corn, avocado, black beans, red onion, and cilantro.
- Add the diced chicken to the bowl.
- In a small bowl, mix ranch dressing and lime juice.
- Pour the dressing over the salad and toss to combine.
- Serve immediately.
