- 2 cups cooked chicken, shredded
- 1 cup mushrooms, sliced
- 1 cup frozen peas and carrots
- 1/2 cup onion, diced
- 1/3 cup butter
- 1/3 cup all-purpose flour
- 1 3/4 cups chicken broth
- 2/3 cup milk
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 pie crust
Instructions
- Preheat the oven to 425°F (220°C).
- In a saucepan, melt butter over medium heat.
- Add onions and mushrooms, sauté until soft.
- Stir in flour, cook for 1 minute.
- Add chicken broth and milk, whisk until thickened.
- Add chicken, peas, carrots, thyme, salt, and pepper.
- Pour the mixture into a pie crust in a pie dish.
- Cover with another pie crust, seal edges, and cut slits for steam.
- Bake for 30-35 minutes or until golden brown.
- Let cool for a few minutes before serving.
Notes
- Use leftover chicken for quicker preparation.
- You can add other vegetables as desired.
- Let the pie cool slightly to avoid burns.
