Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup mushrooms, sliced
  • 1 cup frozen peas and carrots
  • 1/2 cup onion, diced
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pie crust

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a saucepan, melt butter over medium heat.
  3. Add onions and mushrooms, sauté until soft.
  4. Stir in flour, cook for 1 minute.
  5. Add chicken broth and milk, whisk until thickened.
  6. Add chicken, peas, carrots, thyme, salt, and pepper.
  7. Pour the mixture into a pie crust in a pie dish.
  8. Cover with another pie crust, seal edges, and cut slits for steam.
  9. Bake for 30-35 minutes or until golden brown.
  10. Let cool for a few minutes before serving.
