Ingredients

- 2 cups fresh cranberries
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup unsalted butter
- 1 teaspoon vanilla extract
Instructions
- In a saucepan, combine cranberries and sugar over medium heat until cranberries burst.
- Strain the mixture to remove skins and seeds.
- In a bowl, whisk eggs and add strained cranberry juice.
- Return the mixture to the saucepan and cook on low heat, stirring constantly.
- Add butter and vanilla, mixing until thickened.
- Cool the curd before using.

- This curd can be stored in the fridge for up to one week.
- Serve with scones or toast.
