- 1 1/2 cups fresh cranberries
- 1 cup sugar
- 1/2 cup butter, softened
- 1 cup all-purpose flour
- 1/2 cup ground ginger cookies
- 3 eggs
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the ginger cookie crumbs and flour with softened butter.
- Press the mixture into the bottom of a pie dish to form the crust.
- In another bowl, beat the eggs and sugar until combined.
- Add the cream, vanilla, and salt to the egg mixture and mix well.
- Stir in the cranberries.
- Pour the custard mixture over the crust in the pie dish.
- Bake for 30-35 minutes or until the custard is set and lightly golden.
- Let it cool before serving.
