- 1 cup dried cranberries
- 1 cup pistachios, chopped
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil
Instructions
- In a bowl, mix cream cheese and powdered sugar until smooth.
- Add cranberries and pistachios to the mixture.
- Shape the mixture into small balls and place on a baking sheet.
- Chill in the refrigerator for 30 minutes.
- Melt chocolate chips and coconut oil in a microwave.
- Dip each truffle into the chocolate and place back on the baking sheet.
- Refrigerate until the chocolate hardens.
