Ingredients

  • 1 pound cooked chicken, shredded
  • 4 cups chicken broth
  • 1 can (15 oz) crushed tomatoes
  • 2 teaspoons Italian seasoning
  • 1 cup heavy cream
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups spinach
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until soft.
  3. Add minced garlic and cook for another minute.
  4. Stir in shredded chicken, chicken broth, crushed tomatoes, and Italian seasoning.
  5. Bring to a boil, then reduce heat and simmer for 10 minutes.
  6. Add heavy cream and broken lasagna noodles.
  7. Cook until noodles are tender, about 10 minutes.
  8. Stir in spinach and ricotta cheese until combined.
  9. Top with mozzarella cheese and let it melt before serving.
