A comforting and creamy chicken mushroom soup with wild rice.
Ingredients

- 2 cups cooked wild rice
- 1 lb chicken breast, diced
- 1 cup mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp olive oil
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until translucent.
- Add chicken and cook until browned.
- Add mushrooms and thyme, cook until mushrooms are soft.
- Pour in chicken broth, bring to a boil.
- Stir in wild rice and simmer for 20 minutes.
- Add heavy cream, season with salt and pepper.
- Serve hot.
Notes
- Use cooked wild rice for best results.
- Adjust seasoning to your preference.
- This soup can be frozen for later use.
