A creamy and flavorful green bean potato salad.
Ingredients

- 2 cups green beans, trimmed
- 3 cups potatoes, diced
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup red onion, finely chopped
- 1/4 cup celery, diced
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- 1 tablespoon fresh dill, chopped
Instructions
- Boil potatoes in salted water until tender. Drain and let cool.
- Blanch green beans in boiling water for 2-3 minutes. Drain and cool in ice water.
- In a large bowl, combine mayonnaise, sour cream, Dijon mustard, salt, and pepper.
- Add cooled potatoes, green beans, red onion, celery, and dill to the bowl.
- Toss gently to coat all ingredients with dressing.
- Cover and refrigerate for at least 1 hour before serving.

- Use fresh ingredients for best flavor.
- Can be made a day ahead.
