Ingredients

  • 4 cups broccoli florets
  • 1 cup feta cheese, crumbled
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup Greek yogurt
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic. Sauté until soft.
  3. Add broccoli florets and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer until broccoli is tender, about 10 minutes.
  5. Remove from heat and stir in crumbled feta and Greek yogurt.
  6. Blend the soup until smooth using an immersion blender.
  7. Season with salt and pepper to taste.
