Description
A rich and creamy high-protein soup made with broccoli and feta cheese.
Ingredients

- 4 cups broccoli florets
- 1 cup feta cheese, crumbled
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup Greek yogurt
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic. Sauté until soft.
- Add broccoli florets and vegetable broth. Bring to a boil.
- Reduce heat and simmer until broccoli is tender, about 10 minutes.
- Remove from heat and stir in crumbled feta and Greek yogurt.
- Blend the soup until smooth using an immersion blender.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- For extra protein, add cooked chicken or beans.
- Store leftovers in the fridge for up to 3 days.
- This soup can be frozen for later use.
