Ingredients

  • 1 lemon, juiced and zested
  • 4 cloves garlic, minced
  • 1 cup heavy cream

  • Salt and pepper to taste
  • 1 pound baby potatoes
  • 2 tablespoons butter

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and halve the baby potatoes, then toss with olive oil, salt, and pepper.
  3. Spread potatoes on a baking sheet and roast for 25-30 minutes until crispy.
  4. In a skillet, melt butter over medium heat and add garlic, cooking until fragrant.
  5. Add salmon fillets to the skillet, cooking for 4-5 minutes on each side.
  6. Stir in lemon juice, zest, and cream into the skillet with salmon.
  7. Sprinkle in dried dill and season with salt and pepper.
  8. Simmer sauce until thickened, about 3-5 minutes.
