- 4 salmon fillets
- 2 tablespoons olive oil
- 1 lemon, juiced and zested
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 teaspoon dried dill
- Salt and pepper to taste
- 1 pound baby potatoes
- 2 tablespoons butter
Instructions
- Preheat oven to 400°F (200°C).
- Wash and halve the baby potatoes, then toss with olive oil, salt, and pepper.
- Spread potatoes on a baking sheet and roast for 25-30 minutes until crispy.
- In a skillet, melt butter over medium heat and add garlic, cooking until fragrant.
- Add salmon fillets to the skillet, cooking for 4-5 minutes on each side.
- Stir in lemon juice, zest, and cream into the skillet with salmon.
- Sprinkle in dried dill and season with salt and pepper.
- Simmer sauce until thickened, about 3-5 minutes.
- Serve salmon topped with the creamy sauce alongside crispy baby potatoes.
