Ingredients

Scale
  • 2 pounds parsnips, peeled and chopped
  • 1 cup heavy cream
  • 4 tablespoons butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil parsnips in salted water until tender.
  2. Drain and return parsnips to the pot.
  3. Add heavy cream and butter.
  4. Puree using an immersion blender until smooth.
  5. Season with salt and pepper.
