Description
A smooth and creamy parsnip puree ideal as a side dish.
Ingredients
Scale
- 2 pounds parsnips, peeled and chopped
- 1 cup heavy cream
- 4 tablespoons butter
- Salt to taste
- Pepper to taste
Instructions
- Boil parsnips in salted water until tender.
- Drain and return parsnips to the pot.
- Add heavy cream and butter.
- Puree using an immersion blender until smooth.
- Season with salt and pepper.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- Serve warm.
