Description
A rich and creamy soup inspired by the classic Reuben sandwich.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups sauerkraut, drained
- 1 cup cooked corned beef, shredded
- 1 cup heavy cream
- 1 tablespoon Dijon mustard
- 1 teaspoon caraway seeds
- Salt and pepper to taste
- 1 cup shredded Swiss cheese
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the onion and garlic. Sauté until soft.
- Pour in the beef broth and bring to a boil.
- Add sauerkraut and corned beef. Simmer for 10 minutes.
- Stir in the heavy cream, Dijon mustard, and caraway seeds.
- Season with salt and pepper.
- Reduce heat and add Swiss cheese. Stir until melted.
- Serve hot.
Notes
- This soup can be refrigerated for up to 3 days.
- Reheat gently on the stovetop.
- Add more cheese for extra creaminess.
