Ingredients

  • Salt and pepper to taste
  • 1 cup shredded Swiss cheese

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion and garlic. Sauté until soft.
  3. Pour in the beef broth and bring to a boil.
  4. Add sauerkraut and corned beef. Simmer for 10 minutes.
  5. Stir in the heavy cream, Dijon mustard, and caraway seeds.
  6. Season with salt and pepper.
  7. Reduce heat and add Swiss cheese. Stir until melted.
  8. Serve hot.
