Creamy spinach and mushroom lasagna is a delicious and hearty dish that layers pasta with a rich spinach and mushroom filling.


Ingredients

  • 9 lasagna noodles
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 2 cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 2 cups marinara sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions.
  3. In a skillet, heat olive oil over medium heat. Add garlic and mushrooms, sauté until mushrooms are soft.
  4. Add spinach to the skillet and cook until wilted. Season with salt and pepper.
  5. In a bowl, mix ricotta cheese with half of the mozzarella and parmesan cheese.
  6. Spread a layer of marinara sauce on the bottom of a baking dish.
  7. Layer 3 lasagna noodles, half of the ricotta mixture, and half of the spinach and mushroom mixture.
  8. Repeat the layers, finishing with a layer of noodles and marinara sauce on top.
  9. Sprinkle remaining mozzarella and parmesan cheese on top.
  10. Bake for 30-35 minutes until bubbly and golden.

Notes

  • Let the lasagna sit for 10 minutes before serving.
  • You can substitute frozen spinach if fresh is not available.
