- 2 cups cream cheese
- 1 cup sour cream
- 1 cup granulated sugar
- 3 large eggs
- 1 tablespoon vanilla extract
- 1 tablespoon lemon juice
- 1 cup heavy cream
- 1/4 cup granulated sugar (for topping)
Instructions
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, beat cream cheese until smooth.
- Add sour cream, sugar, eggs, vanilla extract, and lemon juice. Mix well.
- Pour the cheesecake mixture into a greased springform pan.
- Bake for 50-60 minutes, until set but slightly jiggly in the center.
- Let the cheesecake cool, then refrigerate for at least 4 hours.
- Before serving, whip heavy cream and spread over the cheesecake.
- Sprinkle granulated sugar on top and caramelize with a kitchen torch.
