- 1/2 cup all-purpose flour
- 1 large egg

- Vegetable oil for frying
Instructions
- Grate the potatoes and place them in a clean cloth to remove excess moisture.
- In a large bowl, combine grated potatoes, corn, cheddar cheese, green onions, flour, egg, salt, and pepper.
- Mix until well combined.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the hot oil, flattening them slightly.
- Fry until golden brown, about 3-4 minutes per side.
- Remove fritters and drain on paper towels.
- Serve hot.

- Serve with sour cream or salsa for dipping.
