Ingredients

- 2 pounds potatoes, diced
- 1 cup mayonnaise
- 1 tablespoon mustard
- 1/2 cup celery, chopped
- 1/2 cup green onions, sliced
- 1/4 cup pickles, chopped
- Salt and pepper to taste
- Oil for frying
Instructions
- Boil the potatoes until tender, then drain and cool.
- In a bowl, mix mayonnaise, mustard, salt, and pepper.
- Add cooled potatoes, celery, green onions, and pickles to the dressing.
- Mix gently to combine.
- Heat oil in a pan and fry the potato salad mixture until crispy.
- Serve warm or cold.

- Adjust seasoning to taste.
- For extra crunch, fry longer.
