Crispy Healthy Zucchini Fritters are a tasty and nutritious snack or side dish.
Ingredients

- 2 medium zucchinis, grated
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup chopped green onions
- 1 clove garlic, minced
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Grate the zucchinis and place them in a clean towel. Squeeze out excess moisture.
- In a bowl, combine grated zucchini, breadcrumbs, Parmesan cheese, eggs, green onions, garlic, salt, and pepper.
- Mix until well combined.
- Heat olive oil in a skillet over medium heat.
- Form the mixture into patties and place them in the skillet.
- Fry until golden brown, about 3-4 minutes on each side.
- Remove from skillet and place on paper towels to drain excess oil.
- Serve warm.
Notes
- Use fresh zucchini for best results.
- Store leftovers in the refrigerator for up to 3 days.
