Ingredients

Instructions

  1. Grate the zucchinis and place them in a clean towel. Squeeze out excess moisture.
  2. In a bowl, combine grated zucchini, breadcrumbs, Parmesan cheese, eggs, green onions, garlic, salt, and pepper.
  3. Mix until well combined.
  4. Heat olive oil in a skillet over medium heat.
  5. Form the mixture into patties and place them in the skillet.
  6. Fry until golden brown, about 3-4 minutes on each side.
  7. Remove from skillet and place on paper towels to drain excess oil.
  8. Serve warm.
