Description
A creamy and hearty potato soup made easily in a crock pot.
Ingredients

- 6 medium potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup bacon bits
- Salt and pepper to taste
Instructions
- Place diced potatoes, onion, and garlic in the crock pot.
- Add vegetable broth and season with salt and pepper.
- Cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
- Stir in heavy cream, cheddar cheese, and sour cream.
- Mix well and let cook for another 30 minutes on low.
- Serve topped with bacon bits and additional cheese if desired.
Notes
- For a thicker soup, mash some of the potatoes before adding cream.
- You can substitute half and half for heavy cream for a lighter version.
- Store leftovers in the fridge for up to 3 days.
