Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup bacon bits
  • Salt and pepper to taste

Instructions

  1. Place diced potatoes, onion, and garlic in the crock pot.
  2. Add vegetable broth and season with salt and pepper.
  3. Cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
  4. Stir in heavy cream, cheddar cheese, and sour cream.
  5. Mix well and let cook for another 30 minutes on low.
  6. Serve topped with bacon bits and additional cheese if desired.

Notes

  • For a thicker soup, mash some of the potatoes before adding cream.
  • You can substitute half and half for heavy cream for a lighter version.
