Description
A hearty and creamy chicken corn chowder made in a crockpot.
Ingredients

- 2 cups cooked chicken, shredded
- 3 cups corn, frozen or fresh
- 1 cup diced potatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
- 1/2 cup diced bell pepper
Instructions
- Add chicken, corn, potatoes, onion, garlic, and bell pepper to the crockpot.
- Pour in chicken broth and stir to combine.
- Season with salt, pepper, and thyme.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in heavy cream.
- Adjust seasoning to taste and serve warm.
Notes
- Use rotisserie chicken for convenience.
- Substitute half and half for a lighter version.
- Add more vegetables for extra nutrition.
