A comforting and hearty soup made with chicken, vegetables, and noodles.
Ingredients

- 1 pound chicken breast
- 4 cups chicken broth
- 2 cups water
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon parsley
- 1 bay leaf
- 8 ounces egg noodles
- Salt and pepper to taste
Instructions
- Place chicken, broth, water, carrots, celery, onion, garlic, thyme, parsley, and bay leaf in the crockpot.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Remove chicken, shred it, and return it to the pot.
- Add egg noodles and cook for an additional 30 minutes on high.
- Stir and serve hot.
Notes
- Adjust vegetables according to your preference.
- Leftovers can be stored in the refrigerator for up to 3 days.
- Add more broth if you prefer a soupier consistency.
