- 1 can black beans, drained
- 1 can corn, drained
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 4 cups chicken broth
- Salt and pepper to taste
- Tortilla strips for serving
- Avocado slices for garnish
- Shredded cheese for garnish
Instructions
- Place chicken breasts in the crockpot.
- Add black beans, corn, diced tomatoes, onion, and garlic.
- Sprinkle chili powder, cumin, salt, and pepper over the ingredients.
- Pour chicken broth into the crockpot.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken with two forks and stir back into the soup.
- Serve with tortilla strips, avocado, and cheese on top.
