Ingredients

- 6 medium potatoes, diced
- 1 onion, chopped
- 3 cups vegetable broth
- 1 cup milk
- 1 cup shredded cheese
- 4 slices bacon, cooked and crumbled
- Salt to taste
- Pepper to taste
Instructions
- Place diced potatoes and chopped onion in the crockpot.
- Add vegetable broth and season with salt and pepper.
- Cook on low for 6-7 hours or high for 3-4 hours.
- Once cooked, mash some potatoes for a thicker consistency.
- Stir in milk and cheese until melted.
- Top with crumbled bacon before serving.
Notes
- Adjust seasoning as needed.
- Use any cheese of your choice.
- For a vegan version, replace milk with plant-based milk and omit bacon.
