Ingredients

  • 2 cups pasta (elbow or rotini)

  • 1 can black beans (15 oz, rinsed and drained)
  • 1 cup corn (frozen or canned)
  • 2 cups beef broth
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced onion
  • 1/2 cup bell pepper (diced)

Instructions

  1. Brown ground beef in a skillet and drain excess fat.
  2. Add beef, taco seasoning, diced tomatoes, black beans, corn, onion, bell pepper, and beef broth to the crockpot.
  3. Stir in pasta and mix well.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours.
  5. Before serving, stir in cheese until melted.
