Ingredients

- 1 pound ground beef
- 1 packet taco seasoning
- 2 cups pasta (elbow or rotini)
- 1 can diced tomatoes (14.5 oz)
- 1 can black beans (15 oz, rinsed and drained)
- 1 cup corn (frozen or canned)
- 2 cups beef broth
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced onion
- 1/2 cup bell pepper (diced)
Instructions
- Brown ground beef in a skillet and drain excess fat.
- Add beef, taco seasoning, diced tomatoes, black beans, corn, onion, bell pepper, and beef broth to the crockpot.
- Stir in pasta and mix well.
- Cover and cook on low for 4-6 hours or high for 2-3 hours.
- Before serving, stir in cheese until melted.
Notes
- Adjust seasoning to taste.
- For a spicier kick, add jalapeños.
- Serve with sour cream and cilantro for garnish.
