Description
A refreshing cucumber salad topped with a spicy peanut dressing.
Ingredients

- 2 large cucumbers, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1/2 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon sriracha sauce
- 1 tablespoon sesame oil
- 1/4 cup chopped cilantro
- Salt to taste
Instructions
- Slice the cucumbers and red onion.
- In a bowl, mix peanut butter, soy sauce, rice vinegar, honey, sriracha, and sesame oil until smooth.
- Toss cucumbers and onions with the dressing.
- Add chopped cilantro and mix well.
- Season with salt to taste.
- Serve chilled.
