Ingredients

- 1 cup lentils
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon curry powder
- 1 teaspoon cumin
- 4 cups vegetable broth
- 1 can coconut milk
- 2 carrots, diced
- 1 bell pepper, chopped
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic; sauté until soft.
- Stir in curry powder and cumin; cook for 1 minute.
- Add lentils, vegetable broth, coconut milk, carrots, and bell pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper to taste.
- Serve hot.

- This soup can be stored in the refrigerator for up to 5 days.
- You can add spinach or kale for extra nutrients.
