Description

A moist and flavorful cake made with dates and walnuts, topped with rich butterscotch sauce.


Ingredients

  • 1 cup pitted dates, chopped
  • 1 cup boiling water
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup walnuts, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine chopped dates and boiling water. Let it sit for 10 minutes.
  3. In a mixing bowl, cream together butter and brown sugar.
  4. Add eggs and vanilla extract to the butter mixture, and mix well.
  5. In another bowl, mix flour, baking powder, and baking soda.
  6. Add the dry ingredients to the wet mixture and combine.
  7. Stir in the date mixture and walnuts.
  8. Pour the batter into a greased cake pan.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
