Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the butternut squash, olive oil, salt, and pepper.
- Toss until the squash is evenly coated.
- Spread the squash in a single layer on a baking sheet.
- Roast for 25-30 minutes, or until tender and lightly caramelized.
- Drizzle honey over the squash and sprinkle with feta cheese.
- Return to the oven for an additional 5 minutes.
- Garnish with fresh parsley before serving.
