Ingredients

  • 4 medium eggplants
  • 250g ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 bell pepper, chopped
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon paprika
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Cut the eggplants in half lengthwise and scoop out some flesh.
  3. In a pan, heat olive oil and sauté onion and garlic until soft.
  4. Add ground beef and cook until browned.
  5. Stir in tomatoes, bell pepper, salt, pepper, and paprika. Cook for 5 minutes.
  6. Stuff the eggplant halves with the beef mixture.
  7. Place stuffed eggplants in a baking dish and cover with foil.
  8. Bake for 30 minutes, then remove foil and bake for another 10 minutes.
  9. Garnish with fresh parsley before serving.
