Ingredients

- 4 medium eggplants
- 250g ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tomatoes, diced
- 1 bell pepper, chopped
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- 1 teaspoon paprika
- Fresh parsley, chopped for garnish
Instructions
- Preheat your oven to 180°C (350°F).
- Cut the eggplants in half lengthwise and scoop out some flesh.
- In a pan, heat olive oil and sauté onion and garlic until soft.
- Add ground beef and cook until browned.
- Stir in tomatoes, bell pepper, salt, pepper, and paprika. Cook for 5 minutes.
- Stuff the eggplant halves with the beef mixture.
- Place stuffed eggplants in a baking dish and cover with foil.
- Bake for 30 minutes, then remove foil and bake for another 10 minutes.
- Garnish with fresh parsley before serving.
Notes
- Choose firm eggplants for best results.
- You can substitute ground beef with ground turkey for a lighter option.
- Serve with rice or salad for a complete meal.
