Description
A healthy twist on traditional pizza using eggplant as the base.
Ingredients

- 2 large eggplants
- 1 cup marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup sliced black olives
- 1/4 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the eggplants into 1/2 inch thick rounds.
- Brush both sides with olive oil and sprinkle with Italian seasoning.
- Place eggplant slices on a baking sheet and bake for 25 minutes.
- Remove from oven and spread marinara sauce on each slice.
- Add mozzarella cheese and top with olives and Parmesan cheese.
- Return to oven and bake for an additional 15 minutes until cheese is bubbly.
- Let cool for a few minutes before serving.
Notes
- Use fresh eggplants for the best flavor.
- Experiment with different toppings like bell peppers or mushrooms.
- Store leftovers in an airtight container in the fridge.
