Ingredients

  • 1 cup marinara sauce

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the eggplants into 1/2 inch thick rounds.
  3. Brush both sides with olive oil and sprinkle with Italian seasoning.
  4. Place eggplant slices on a baking sheet and bake for 25 minutes.
  5. Remove from oven and spread marinara sauce on each slice.
  6. Add mozzarella cheese and top with olives and Parmesan cheese.
  7. Return to oven and bake for an additional 15 minutes until cheese is bubbly.
