- 2 cups cheese tortellini
- 1 can enchilada sauce
- 1 cup shredded cheese
- 1 cup diced bell peppers
- 1 cup corn
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the tortellini according to package instructions.
- In a large bowl, mix the enchilada sauce, bell peppers, corn, cumin, garlic powder, onion powder, and salt.
- Add the cooked tortellini to the mixture and stir well.
- Spread the mixture in a baking dish and top with shredded cheese.
- Bake for 20-25 minutes until bubbly and golden.
Notes
- Feel free to add cooked chicken or beef for extra protein.
- Use any type of cheese you prefer.
- Top with fresh cilantro for added flavor.
