A rich and creamy espresso cheesecake with a chocolate crust.
Ingredients

- 1 ½ cups graham cracker crumbs
- ½ cup unsweetened cocoa powder
- ½ cup sugar
- ½ cup melted butter
- 4 (8 oz) packages cream cheese
- 1 cup sugar
- 4 large eggs
- 1 cup sour cream
- ½ cup brewed espresso
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, cocoa powder, sugar, and melted butter.
- Press the mixture into the bottom of a springform pan.
- In another bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Mix in sour cream, espresso, and vanilla extract.
- Pour the cream cheese mixture over the crust.
- Bake for 55-60 minutes or until set.
- Let it cool and refrigerate for 4 hours before serving.
Notes
- Serve chilled for best flavor.
- Top with chocolate shavings if desired.
- Adjust espresso strength to taste.
