Description

A refreshing feta and cranberry rigatoni salad with a tangy lemon vinaigrette.


Ingredients

  • 8 oz rigatoni pasta
  • 1 cup feta cheese, crumbled
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the rigatoni according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled pasta, feta, cranberries, red onion, and parsley.
  3. In a separate bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve chilled or at room temperature.
