Description
A refreshing feta and cranberry rigatoni salad with a tangy lemon vinaigrette.
Ingredients

- 8 oz rigatoni pasta
- 1 cup feta cheese, crumbled
- 1/2 cup dried cranberries
- 1/4 cup red onion, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Cook the rigatoni according to package instructions. Drain and let cool.
- In a large bowl, combine the cooled pasta, feta, cranberries, red onion, and parsley.
- In a separate bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve chilled or at room temperature.
Notes
- For added crunch, consider adding nuts.
- Store leftovers in an airtight container in the refrigerator.
