Description
A fresh and crunchy Brussels sprouts salad.
Ingredients

- 2 cups fresh Brussels sprouts, shredded
- 1/2 cup walnuts, chopped
- 1/2 cup dried cranberries
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- Shred the Brussels sprouts and place them in a large bowl.
- Add walnuts, cranberries, and feta cheese.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
- Pour the dressing over the salad and toss well.
- Serve immediately or refrigerate for 30 minutes to enhance flavors.
Notes
- Adjust sweetness by adding more or less honey.
- Substitute feta with goat cheese if preferred.
- This salad can be made a day ahead.
