Instructions
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a bowl, combine olive oil, minced garlic, thyme, rosemary, salt, and pepper.
- Add the potatoes to the bowl and toss until evenly coated.
- Spread the potatoes on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes or until golden brown and crispy.
- Serve hot, garnished with fresh herbs if desired.
