Description

Ingredients

  • Rice paper wrappers – 4 sheets
  • Cooked shrimp – 8 pieces
  • Rice noodles – 1 cup
  • Fresh mint – 1/4 cup
  • Fresh basil – 1/4 cup
  • Shredded carrots – 1/2 cup
  • Sliced cucumber – 1/2 cup
  • Lettuce leaves – 4 leaves
  • Peanut sauce – for dipping

Instructions

  1. Soak rice paper wrappers in warm water until soft.
  2. Lay the wrapper flat on a clean surface.
  3. Place shrimp, rice noodles, mint, basil, carrots, cucumber, and lettuce in the center.
  4. Fold the sides of the wrapper over the filling.
  5. Roll tightly from the bottom to the top.
  6. Repeat for remaining wrappers and filling.
  7. Serve with peanut sauce for dipping.
