Description
A fresh and healthy giant summer roll filled with vegetables and protein.
Ingredients
- Rice paper wrappers – 4 sheets
- Cooked shrimp – 8 pieces
- Rice noodles – 1 cup
- Fresh mint – 1/4 cup
- Fresh basil – 1/4 cup
- Shredded carrots – 1/2 cup
- Sliced cucumber – 1/2 cup
- Lettuce leaves – 4 leaves
- Peanut sauce – for dipping
Instructions
- Soak rice paper wrappers in warm water until soft.
- Lay the wrapper flat on a clean surface.
- Place shrimp, rice noodles, mint, basil, carrots, cucumber, and lettuce in the center.
- Fold the sides of the wrapper over the filling.
- Roll tightly from the bottom to the top.
- Repeat for remaining wrappers and filling.
- Serve with peanut sauce for dipping.
