  • 1/2 cup unsalted butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 cup sour cream
  • Whipped cream for topping

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Mix gingerbread cookie crumbs and melted butter in a bowl.
  3. Press the mixture into the bottom of a springform pan.
  4. In a large bowl, beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in vanilla, ginger, cinnamon, nutmeg, cloves, and sour cream.
  7. Pour filling over crust in the springform pan.
  8. Bake for 55-60 minutes until set.
  9. Cool on a wire rack, then refrigerate for at least 4 hours.
  10. Top with whipped cream before serving.
