- 2 cups gingerbread cookie crumbs
- 1/2 cup unsalted butter, melted
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 cup sour cream
- Whipped cream for topping
Instructions
- Preheat oven to 325°F (160°C).
- Mix gingerbread cookie crumbs and melted butter in a bowl.
- Press the mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla, ginger, cinnamon, nutmeg, cloves, and sour cream.
- Pour filling over crust in the springform pan.
- Bake for 55-60 minutes until set.
- Cool on a wire rack, then refrigerate for at least 4 hours.
- Top with whipped cream before serving.
Notes
- Use fresh ginger for more flavor.
- Let the cheesecake cool completely before refrigerating.
- Serve with additional gingerbread cookies for decoration.
