- 1 cup mushrooms, sliced

Instructions
- Preheat the oven to 400°F (200°C).
- Spread sliced mushrooms and onions on a baking sheet.
- Drizzle with olive oil, salt, and pepper.
- Roast for 20 minutes until tender.
- Butter one side of each slice of bread.
- Layer Gouda cheese, roasted mushrooms, and onions between two slices of bread, buttered side out.
- Heat a skillet over medium heat.
- Grill the sandwich for 4-5 minutes on each side until golden brown.
- Slice and serve hot.
