- 2 large chicken breasts
- 1 cup cream cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup fresh spinach, chopped
- 1/4 cup sun-dried tomatoes, diced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine cream cheese, mozzarella, spinach, sun-dried tomatoes, garlic powder, onion powder, salt, and pepper.
- Cut a pocket in each chicken breast and stuff with the cheese mixture.
- Heat olive oil in a skillet over medium heat.
- Sear the stuffed chicken breast for 3-4 minutes on each side.
- Transfer the chicken to a baking dish and bake for 20-25 minutes.
- Check that the chicken is cooked through and serve hot.
