A refreshing Greek salad made with cabbage and a tangy dressing.
Ingredients

- 1 small head of green cabbage, shredded
- 1 medium carrot, grated
- 1 medium cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/2 cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine shredded cabbage, carrot, cucumber, bell pepper, red onion, and parsley.
- In a separate bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Let the salad sit for at least 15 minutes before serving to allow flavors to meld.
- Serve chilled or at room temperature.

- Adjust the dressing to your taste.
- Can add feta cheese for extra flavor.
