A fresh and zesty dip inspired by Greek flavors.
Ingredients

- 2 cups diced tomatoes
- 1 cup diced cucumber
- 1/2 cup diced red onion
- 1/2 cup Kalamata olives, pitted and chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Combine all the diced vegetables in a large bowl.
- Add the chopped olives and parsley.
- In a separate bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the vegetable mixture and toss to coat.
- Let it sit for at least 30 minutes to allow flavors to meld.
Notes
- Serve with pita chips or fresh bread.
- Can be stored in the refrigerator for up to 3 days.
