- 2 cups spinach, chopped
- 1 cup mushrooms, sliced
- 1 cup bell peppers, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 2 eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, sauté until soft.
- Add mushrooms and bell peppers, cook until tender.
- Add spinach, cook until wilted.
- In a bowl, mix ricotta, mozzarella, eggs, salt, and pepper.
- Add the vegetable mixture to the cheese mixture, stir to combine.
- Pour the filling into the pie crust.
- Bake for 30-35 minutes or until golden brown.
- Let it cool for 10 minutes before slicing.
