Ingredients

- 2 cups fresh green peas
- 1/2 cup diced cucumber
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh mint
- 1/4 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Boil the green peas for 2-3 minutes until tender. Drain and cool.
- In a large bowl, combine peas, cucumber, onion, mint, and feta cheese.
- In a small bowl, whisk olive oil and lemon juice. Season with salt and pepper.
- Pour dressing over the salad and toss gently to combine.
- Serve immediately or chill before serving.
