Description
Delicious mini cheesecakes topped with grilled pineapple.
Ingredients

- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 cup crushed graham crackers
- 1/4 cup butter, melted
- 1 cup pineapple, sliced
- 2 tbsp brown sugar
- 1 tbsp honey
Instructions
- Preheat the grill to medium heat.
- Mix cream cheese, sugar, and vanilla until smooth.
- Add sour cream and blend well.
- Combine graham crackers and melted butter in a bowl.
- Press the graham cracker mixture into mini cheesecake pans.
- Fill the pans with the cream cheese mixture.
- Grill pineapple slices for 3-4 minutes on each side.
- Top each cheesecake with grilled pineapple.
- Chill in the refrigerator for at least 2 hours before serving.

- Use fresh pineapple for best flavor.
- Adjust sweetness to your preference.
